Trim crust off bread and cut into 1 inch cubes. Put in buttered 9x13 pan. Sprinkle grated cheese on top. Beat eggs a little and mix with milk and seasonings. Pour mixture over bread and cheese. Sprinkle with paprika. Cover with foil and bake 1 hour at 350 degrees for 50 minutes covered and 10 minutes uncovered. This can be prepared a day ahead and refrigerated until ready to bake. Allow to set a while before serving BRUNCH EGG CASSEROLE
Beat eggs well. Add rest of ingredients. Stir in browned and drained sausage. Refrigerate overnight. Bake.

TOP INGREDIENTS: Add sugar, salt, to shortening and scalded milk and cool. Add yeast to 110-155 degree water. Add 6 cups flour and water to milk mixture. Add yeast and egg yolks, then rest of flour. It has to be stiff enough to knead but not too stiff. Raise 2 hours, punch, raise 1 1/2 hours. Roll 1/2 inch thick. Raise 45 minutes or so. 365 degree fat. Double to make 5-6 dozen. All egg yolks are best.
